Xuchang Hulatang Peppery Soup 许昌胡辣汤
Xuchang Hulatang Peppery Soup is featured among the local specialties of Henan.

Xuchang Hulatang Peppery Soup (许昌胡辣汤) is the Xuchang (许昌) version of hulatang, the peppery Henan soup; the Xuchang municipal party-history and local-records office calls it the local snack that best represents the city's flavour.
Ingredients
The office puts the soup's quality down to carefully chosen ingredients with a local character. The broth is simmered from a rich stock (高汤) with mutton, shredded kelp, vermicelli and wheat gluten (面筋), and the office describes the result as exceptionally savoury.
Where it comes from
The same office concedes that the Xuchang soup is less famous than the hulatang of Xiaoyao town (逍遥镇) in Zhoukou (周口), which has become a brand, is run on a commercial scale and is known well beyond the town. It argues that in flavour and in what goes into the bowl, the Xuchang version is no worse than Xiaoyao's and may even be better.
