Chongyang Fried Dough Twists (崇阳麻花) include the small, ridged twists made by Zhongwang (众望) in Chongyang (崇阳). In an August 2026 Hubei Daily (湖北日报) factory visit, the golden twists measured about eleven centimetres long, with ten ridges.

How it is made

Zhongwang shapes its classic twists by rolling the dough, using machinery designed to imitate hand rolling. Company representative Fang Naxu (方纳序) links this method to a crisper bite, a lighter oily character and a pronounced wheat aroma. He contrasts it with the extruded twists common elsewhere in the industry.

Where it comes from

The business grew from hand production in Baini (白霓). As workers became harder to recruit, founder Fang Fude (方福德) began developing a rolling machine in 2003. His first fully automatic machine and production line were completed in 2012 after nearly a decade of work. In 2026, the factory was still adjusting its equipment to roll the twists more loosely for a crisper texture.
