Bean-and-Rice Noodle Strips (豆丝) are strips cut from a thin sheet of rice-and-bean batter that look very much like noodles. Chinese Wikipedia counts them among the ten famous foods of Wuhan (武汉) and among the three traditional snacks of Huangpi (黄陂).
How it is made
The raw materials are rice with mung beans, soybeans and similar ingredients, ground together into a slurry. The slurry is spread in a wok and set into a thin skin, and the skin is then cut into strips. The Chinese name follows that process: dou (豆) for the beans in the batter and si (丝) for the shredded strips.
Where it comes from
The same food also goes by the names dougao (豆糕), douzhe (豆折) and douba (豆粑). Besides its place among Wuhan's ten famous foods, it is one of the traditional local New Year goods (年货) that families buy in for the Spring Festival.
