Ezhou Fish Balls (鄂州鱼丸) are the fish balls of Ezhou (鄂州), Hubei. A news report on the Ezhou municipal government portal calls the fish balls made in Echeng District (鄂城区) Echeng fish balls (鄂城鱼丸).
Where it comes from
Ezhou is promoted as China's home of Wuchang bream cuisine (中国武昌鱼美食之乡). On the evening of 22 September 2024 Echeng District opened its Wuchang bream culture and tourism festival in Dongshan village (峒山村), Changgang township (长港镇). Before the opening, the district's culture, tourism, hotel and food association invited Cheng Haizhong (程海中), named as the third-generation inheritor of the intangible-heritage Wuchang bream cooking technique. He led well-known local chefs in making Wuchang bream dishes in 155 flavours together with Wuchang bream fish balls for a public tasting billed as a thousand-person sampling of the fish (武昌鱼千人品).
How it is made
The Ezhou government portal describes fish-ball making in Echeng as moving from hand work in traditional workshops towards larger-scale production, with the Huahu (花湖) airport used to sell the balls to wider markets. In 2023 the Echeng District government brought an airport-linked agricultural products park to Zelin township (泽林镇); its Zelin fish-ball park (泽林鱼丸园区) is planned, once built, to produce and sell 3.7 million jin, about 1,850 tonnes, of fish balls a year.
