Yichang Fried Potatoes (炕洋芋), also called kang tudou (炕土豆), are a Tujia (土家) street snack in Yichang (宜昌). Highland potatoes are fried, seasoned and served with chili oil and diced pickled radish.

Frying and seasoning

The potatoes are fried until golden. Salt, ginger, garlic and chili powder are then added and thoroughly mixed through the potatoes. Red chili oil and diced sour radish accompany this seasoned serving.

Flavour and texture

The potato skin is crisp, while the inside is soft and yielding. The sour radish supplies a separate crunch alongside the potatoes.

A skewer snack

A bamboo skewer lifts each potato to the mouth. Hubei Daily describes pieces small enough to eat one at a time in a single bite.
