Fried Radish Rice-Batter Fritters (萝卜饺子) are a Yichang (宜昌) snack with shredded radish inside a golden fried shell. Rice and soybeans form the batter, while scallion, garlic and chilli season the filling.

How it is made

The Yichang Culture and Tourism Bureau (宜昌市文化和旅游局) gives a batter ratio of 90 per cent rice to 10 per cent soybeans. Both are soaked and ground into a slurry. Shredded red radish is mixed with scallion, garlic and chilli powder, with coriander as an optional addition.

A crescent-shaped iron ladle serves as the mould. A layer of batter goes in first, followed by radish filling and another covering of batter. The filled ladle goes into hot oil until the fritter turns golden.

Flavour and texture

Xiling Release (西陵发布) describes a crisp shell around soft rice batter and juicy, sweet radish. A mild chilli heat emerges as the fritter is chewed.
