Qianjiang Guokui Flatbread (潜江锅盔) is a baked flatbread from Qianjiang (潜江), Hubei. The city government's food map describes its plain form, kan guokui (砍锅盔, "chopped guokui"), as the earliest and most authentic guokui in Qianjiang, the one from which all the city's other guokui derive.
How it is made and tastes
The bread comes out of the oven round and is chopped into triangles as it is taken out. Nothing is added to season it, so it keeps the natural colour of the flour, and it is crisp on the outside and tender inside. The food map suggests it is even better with a youtiao (油条), a fried dough stick, tucked inside.
Where it comes from
The Qianjiang food map, compiled by the city commerce bureau and the local cooking and hotel trade association, lists the flatbread among 30 Qianjiang specialities and places it in its section on guozao (过早), the Hubei word for eating breakfast.
