Sweet Potato Crisp Sweets 苕酥
Sweet Potato Crisp Sweets is featured among the local specialties of Hubei.

Sweet Potato Crisp Sweets (苕酥) combine sweet potato, glutinous rice and eggs in a crisp, sweet Yichang (宜昌) confection. Xinhua (新华网) describes the Three Gorges version as fragrant and crumbly, retaining the flavour of the sweet potato.
Ingredients
Xinhua identifies sweet potatoes grown in sandy soil, glutinous rice and eggs as the ingredients of Three Gorges shaosu (三峡苕酥). Its description emphasises a crunchy bite that breaks down readily in the mouth.
Where it comes from
Production has also moved beyond handwork. In an October 2022 Three Gorges Evening News (三峡晚报) profile, maker Lu Dan (鲁丹) described converting the traditional hand process at Lulaoji (鲁老记) to mechanised production. He had begun by working on the factory floor to learn the craft.
Lu’s business sent the sweets to visitor sites including the Three Gorges Dam (三峡大坝) and Three Gorges Tribe (三峡人家). In March 2022, the Yichang commerce bureau selected Lulaoji shaosu among its ten popular local souvenir gifts.
