Xianning Osmanthus Rice Cake 咸宁桂花糕
Xianning Osmanthus Rice Cake is featured among the local specialties of Hubei.

Xianning Osmanthus Rice Cake (咸宁桂花糕) is a cake made from glutinous rice flour, sugar and honeyed osmanthus blossom (蜜桂花) in Xian'an district (咸安区) of Xianning (咸宁), Hubei. The Xian'an district government lists it among the district's noted local products and dates its creation to the late Ming dynasty.
Flavour and texture
The district government describes the cake as fine, soft and moist, white in colour and strongly scented with osmanthus, and says it breaks down in the mouth without leaving residue. It is rich without being greasy, not astringent, and slides down smoothly; the flavour is sweet with a hint of salt, and the fragrance carries a cooling note.
Where it comes from
Xianning is known across China as a home of osmanthus ("桂花之乡"), and the Xian'an government presents the cake as a product of that osmanthus country.
