Gua liangfen takes its identity from the way a set starch jelly is turned into strips. The Hunan government recipe uses mung-bean flour or starch dispersed in water, then stirred into boiling water until thick. The mixture is poured into a round basin and cooled until it holds together. After the set jelly is turned out, a perforated scraper draws long pieces from its surface. This method gives the dish a slippery, yielding texture and an irregular strip shape, quite different from a strand made by rolling wheat dough.

The jelly itself is a mild base for the dressing. The reviewed account combines soy sauce, vinegar, sesame oil, toasted sesame and garlic, with scallion and chilli among the flavouring options.
