Liling Chilli Pork Stir-Fry (醴陵小炒肉) is a stir-fry of pork and chilli from Liling (醴陵) in Zhuzhou (株洲), Hunan, presented by Rednet (红网) and the Liling city media centre as one of Liling's ten famous dishes.
Ingredients
The meat is pork from local native pigs, chosen at roughly seven parts lean to three parts fat. The chilli is the "玻璃牛角辣椒" ("glass ox-horn chilli") of Hejiaqiao (贺家桥) in Liling, which Rednet calls well known across Hunan. A few pieces of pig's blood, liver, heart and lung go in as well, and Rednet says they give the dish a fuller flavour.
Flavour and texture
Rednet describes Liling Chilli Pork Stir-Fry as not greasy, with tender meat and a sweet-tasting broth.
Where it comes from
Rednet calls it a dish that cannot be missing from the tables of Liling people. It won a prize at the first China Rural Cuisine Cooking Competition (中国乡土菜烹饪大赛), and the Liling food series by Rednet and the city media centre features it among the ten famous dishes of Liling.
