Ningyuan Xiaguan Boiled Meatballs (宁远下灌水丸子) are a pork speciality of Xiaguan (下灌) in Ningyuan (宁远). Their pale meatballs sit in soup and have a soft, smooth texture. They are also known as zhuangyuan meatballs (状元水丸子), a name referring to a top imperial examination graduate.
Pounding the pork
Hunan Daily (湖南日报) describes a laborious preparation using very fresh pork hind leg. Two workers pound the meat continuously for more than forty minutes. Although the finished dish resembles ordinary water-poached meatballs, the newspaper distinguishes its preparation and flavour.
Soup and scallions
At Ningyuan’s June 2024 village cooking competition, Xiaguan team chef Li Chunyan (李春艳) served the meatballs in a bowl of soup with a scattering of scallions. CNR (央广网) describes the pale, tender balls floating in the broth; Li emphasises their smooth, yielding texture.
