Pingjiang jianggan is a concentrated dried-tofu preparation associated with Changshou in Pingjiang. The Yueyang tourism account follows it from soybeans to pressed bean-curd blanks, then through several distinct flavouring stages. Thin squares first take on a soy-based aromatic braise and are cooked with chicken stock. Charcoal baking firms the tofu further, while sesame oil contributes fragrance and a glossy finish.
