Wild Greens and Cured Pork Sticky Rice (社饭) is a Tujia (土家族) festival food in Zhangjiajie (张家界), eaten for the she festival in the second lunar month. Its rice combines wild greens and onions with fragrant fried cured pork.
Two kinds of rice
Wild onions and she greens are gathered before the festival, washed, chopped and dried in a pan. Fatty cured pork is fried until fragrant and set aside. Xinhua (新华网) describes a mixture of three parts glutinous rice to one part non-glutinous rice. The latter cooks first; glutinous rice is added once it is half cooked. After the rice water is drained, the greens, onions and pork are stirred in and the mixture finishes over a low fire.
A food to share
Hunan’s culture and tourism department connects shefan with offerings to the gods of land and grain. Tujia families also give the rice to relatives and friends, exchanging portions beyond their own household.
