Biluochun Tea Shrimp (碧螺虾仁) pairs shelled river shrimp with Biluochun tea (碧螺春) in Suzhou (苏州). Pinkish shrimp and green tea leaves share the plate, with tender flesh and a light tea fragrance. Suzhou’s tourist information centre describes it as a dish served when entertaining friends and relatives in spring.

A brief turn in the pan

The shrimp are peeled by hand and coated before cooking. In the tourist information centre’s preparation, they are moved through relatively cool oil for about 30 seconds, then briefly tossed with a little Biluochun tea just before leaving the pan.

Shrimp beneath the coating

Jiangsu Broadcasting’s 2018 seasonal food guide specifies white-shelled shrimp from the Dongshan (东山) area. Their coating combines egg white, starch and salt. The finished shrimp are pinkish white and silky, carrying a faint tea scent.
