Langshan Chicken (狼山鸡) is a local chicken breed of Nantong (南通), Jiangsu, raised for both eggs and meat, and in Rudong county (如东县) it is cooked as a clear-simmered dish, qingdun Langshan ji (清炖狼山鸡).

The bird

The Rudong county government describes Langshan Chicken as a well-known dual-purpose breed with a well-shaped, sturdy body, black feathers, a red comb, white skin and slate-coloured shanks. It lists the meat as high in protein, amino acids and inosinic acid and low in abdominal fat.

Nantong city groups the breed with two other local livestock breeds, the Jianghai native pig (江海土猪) and the Haimen goat (海门山羊), under a registered brand called Tongnong Sanbao (通农三宝), the three treasures of Nantong farming.

How it is eaten

Clear simmering (qingdun) means cooking the bird slowly in water without first frying or browning it, so the bird comes to the table in a clear broth. In September 2020 Rudong Clear-Simmered Langshan Chicken was named one of Jiangsu's hundred local landmark dishes (江苏省百道乡土地标菜), a title given jointly by the provincial departments of agriculture, culture and tourism, and commerce.

Rudong has also developed processed products from the breed, among them air-dried chicken (fengji, 风鸡) and cooked chicken (shaoji, 烧鸡).

Where it comes from

Rudong Langshan Chicken became a Chinese agricultural geographical indication in 2015, entered the national agricultural brand catalogue in 2019, came under a protection programme for geographical-indication products in 2020 and was listed as a Nantong time-honoured brand in 2021. In 2024 the Ministry of Agriculture and Rural Affairs placed it in its agricultural brand cultivation plan, the only brand from Nantong chosen that year.
