Liyang Tied Liver Bundles (溧阳扎肝) combine pork liver with skin-on pork, fried tofu and rehydrated dried bamboo shoots, all secured with pork small intestine. CCTV describes this Liyang (溧阳) dish as rich and savoury, suitable alongside rice or alcoholic drinks.
Tied and slowly braised
The tofu, pork, bamboo shoots and liver are cut into long strips, arranged in sequence and bound with the intestine. The bundles are seasoned with braising liquid and cooked slowly. This brings together the fattiness of the pork, the refreshing bite of bamboo shoots, the aroma of liver and the chew of the intestine.
A local association
Jiangsu Tianmu Lake Tourism Co. links the dish particularly with Shezhu Town (社渚镇) and the Pingqiao (平桥) area in its introduction to Liyang food.
