Yancheng Egg Crepe 盐城鸡蛋饼
Yancheng Egg Crepe is featured among the local specialties of Jiangsu.

Yancheng Egg Crepe (盐城鸡蛋饼) is a batter pancake cooked with an egg on a hot iron plate, and Wenhui Daily (文汇报) calls it the most common snack on the streets and lanes of Yancheng (盐城), Jiangsu.
How it is made
The cook heats an iron plate over the fire to the right temperature, wipes on a thin layer of oil, ladles on batter and spreads it quickly. Once the batter has set, an egg is cracked onto it; after a moment the pancake is turned over to cook the other side. It is then drizzled with sesame oil and scattered with black sesame and chopped spring onion, brushed with a thick sauce, topped with fillings and folded up.
Flavour and texture
The pancake is springy and supple, smooth and tender in the mouth. The fillings add their own textures, and the choice between a sweet sauce and a chilli sauce changes the taste again; the paper puts it as a hundred diners, a hundred different egg crepes. It is quick and simple to make, and the paper counts it among the best foods for breakfast. The same snack is sold in many Chinese cities, but the paper describes the Yancheng version as a style of its own.
