Duchang Rice Cakes (都昌米粑), also called jiaoziba (饺子粑), are a steamed, filled rice snack from Duchang (都昌) in Jiujiang, Jiangxi, which the county government describes as an old county on the shore of Poyang Lake (鄱阳湖).

How it is made

The Duchang county government's food guide describes a rice skin "as thin as paper" (皮薄如纸) wrapped around a filling such as shredded radish or pickled greens with minced pork. Once steamed, the cakes turn glistening and translucent, and the guide calls the taste fresh and strongly savoury.

How it is eaten

Duchang Rice Cakes are breakfast food. According to the county guide, breakfast shops in the old town steam them and sell them on the spot, and the guide pairs them with Duchang fried cakes (都昌煎粑) as the town's early-morning snacks. The fried cakes make a useful contrast: their chive or shredded-radish filling is wrapped in rice batter and fried in hot oil until golden and crisp, while the rice cakes are steamed.

Where it comes from

The county guide calls the snack "filial rice cakes" (孝心米粑) and a food with a thousand-year history, and repeats the local tradition that Tao Kan (陶侃) created it for his mother.

The cakes also appear at gatherings in the run-up to the New Year. A China News Service photo report from January 2026 shows Nanxi Village (南溪村) in Hehe Township (和合乡), Duchang, holding a Laba festival gathering themed on Laba porridge and rice cakes, where villagers, neighbours and visitors drank the porridge and ate rice cakes made on the spot.

Questions before you order
