Huichang Dried Tofu (会昌豆干), in full Huichang soy-sauce dried tofu (会昌酱油豆干), is a pressed, braised and oven-dried tofu from Huichang County (会昌县) in Ganzhou, southern Jiangxi.

How it is made

The Huichang county government says the product is made from high-quality soybeans and natural spices. It lists the sequence: soybeans are soaked and ground into soy milk, made into tofu and pressed into thin sheets; the sheets are braised in a seasoned liquid (卤制), baked with heat in a drying room, cut to shape and vacuum-packed. The county counts more than ten major steps.

Flavour and texture

The county sums up Huichang Dried Tofu in four words: thin, fragrant, salty and spicy. Chewed slowly, it has a firm, springy bite.

Where it comes from

The Ganzhou city government calls Huichang a well-known home of soy-braised dried tofu. The Huichang county government describes the product as a Jiangxi speciality with several hundred years of history that was once sent as tribute; the Ganzhou page dates the tribute designation to the Jiaqing reign of the Qing dynasty and links the product's story further back to the Qianlong emperor.

In Huichang an old saying goes "来到会昌,没有吃到会昌豆干等于白来": coming to Huichang without eating its dried tofu means the trip was wasted. In 2016 the trademark office of China's State Administration for Industry and Commerce registered the name Huichang soy-braised dried tofu (会昌酱干) as a geographical-indication certification mark.
