Leping Crisp Cookies (乐平桃酥) are taosu pastries from Leping (乐平), a city under Jingdezhen (景德镇) in Jiangxi, where the Jiangxi Food Factory (江西食品厂) makes them under the An brand (安牌).

Where it comes from

Taosu is a long-established type of Chinese pastry, and the Leping committee of the Chinese People's Political Consultative Conference (CPPCC) presents An-brand taosu as the city's own. China News Service dates the Jiangxi Food Factory to 1954, while the Leping CPPCC gives 1958. In the early 1980s the factory's technical team spent several years and hundreds of trials working out the recipe for An-brand taosu, which it has since kept refining with modern methods.

The Leping CPPCC says the cookies have won eight awards, among them provincial and ministry quality awards and a gold medal at the first China Food Expo, and that food specialists call them the "king of Chinese taosu" (中国桃酥王). The factory now uses that phrase in the product name.

How it is made

The Leping CPPCC highlights two changes to traditional taosu: refined vegetable oil replaces animal fat, and the factory has added a line of vegetable and nut versions. It describes the result as carefully made and crisp, light and pleasant to eat.

Production today is mechanised. China News Service lists the steps as mixing the ingredients, homogenising the dough in a mixer, dividing it into measured portions by machine, shaping, automatic baking, and inner and outer packing. On 23 January 2025 it photographed workers at the factory's plant in the Jinshan Industrial Park (金山工业园区) checking freshly baked cookies, as the factory worked overtime to meet Spring Festival demand.
