Lushan Stone Fish Scrambled Eggs (庐山石鱼炒蛋) is a dish of eggs cooked with stone fish (石鱼), the tiny, translucent fish of the springs and waterfalls of Lushan (庐山) in Jiujiang (九江), Jiangxi. The Jiujiang city government lists it among Lushan's specialty dishes.

The fish

Lushan stone fish are translucent and scaleless, usually 30 to 40 millimetres long, about the length of an embroidery needle. The Jiujiang city government adds that even after seven or eight years they grow no longer than one cun (about 3 centimetres), so they are also called "embroidery needles" (锈花针). They are small, long and slightly flattened.

They get their Chinese name from where they live: in Lushan's gorge streams, springs and waterfalls, making their nests in the rock crevices the water flows through. Stone fish are also found in the mountains of Jiujiang, Yichun (宜春), Ganzhou (赣州) and Ji'an (吉安), but the city government rates the Lushan fish as the best.

Flavour and cooking

Both governments describe the flesh as fine, tender and fresh-tasting, with a mellow fragrance. The fish can be stir-fried, braised, stewed or steeped, and cooking it with eggs is the version the Jiujiang city government names as a Lushan specialty.

Where it comes from

The stone fish is one of the "three stones of Lushan" (庐山三石), together with the rock frog known as stone chicken (石鸡) and the stone ear (石耳). The Lushan city government presents the three as foods that visitors to the mountain should try.
