酸辣鱼 (Hot and Sour Fish) names its own flavour in Xinyu, Jiangxi, where sour and hot sit in front of the word for fish rather than behind it.

A taste, not a recipe

Most regional dishes name a place or an ingredient; this one names a balance. 酸 is sour, 辣 is hot, and 鱼 is fish, so the title promises a direction of flavour and leaves the fish and the method to the kitchen. It appears in the fish and seafood group of a Xinyu menu, where cooks work with river and pond fish from central Jiangxi.

Jiangxi cooking is comfortable with chilli, and sour-and-hot combinations turn up in several guises across the province. The version in front of you will follow the kitchen's habit rather than a single provincial standard.

Two ways to build the sauce

One route is to fry the fish or its pieces first, then add vinegar, chilli, ginger and garlic to a hot pan so the sauce thickens around the fish. The other is to simmer the fish in a seasoned liquid so that the sourness works into the flesh. Both are common, and they give different textures, one firmer at the edges and one softer throughout.

Ask whether the fish is fried first and whether it comes whole or in pieces. If the fish is whole, ask for its size, since that decides the price and how many people the plate will serve.

Where sour meets heat

The dish is judged on balance. Vinegar gives the lift, chilli gives the heat, and a little sugar or soy keeps the two from fighting. Expect a glossy sauce rather than a thin broth, with the sourness arriving first and the heat following. If one note dominates, the kitchen has leaned too far in one direction for most tastes.

Beyond the fish

Vinegar, chilli, ginger, garlic, soy and cooking wine are the usual supports, sometimes with pickled vegetables, tomato or a fermented chilli paste. Sourness may come from vinegar or from a fermented ingredient, which matters if you are avoiding certain preservatives or flavours.

Fish is a common allergen, and freshwater fish carries small bones. Ask whether the kitchen can serve it off the bone if that is a concern, and confirm whether the sauce contains alcohol or wheat-based soy if those matter to you.

Ask for the heat you want

State your chilli preference before the fish goes into the pan, because the heat is built in during cooking rather than added later. One fish usually covers two to three people with rice and a vegetable. If the price depends on the weight of the fish, ask for the figure before it is cooked.

Sauce, rice, patience

Spoon the sauce over rice rather than letting it pool on the plate, and take the fish in sections so the flesh does not fall apart. Small bones make this a dish to eat slowly with the serving spoon to hand. A plain vegetable and a clear soup restore the palate between mouthfuls of a strongly seasoned plate.

Gannan vinegar-chilli fish 赣南小炒鱼 →

Gannan vinegar-chilli fish comes from the south of the province and works the same flavour territory from a different starting point: pieces of fish stir-fried quickly with vinegar and chilli rather than simmered in a built-up sauce. Both lead with sour and hot, but one is fast and firm and the other is slower and glossier.

Questions before you order

How hot is 酸辣鱼 usually?

It varies a great deal between kitchens, and Jiangxi cooking can be genuinely hot. Tell the kitchen your preference before cooking, because the chilli goes in during preparation.

Is the fish served whole?

Both whole and cut versions exist. Ask which one the kitchen prepares, and if it is whole, ask for the size and price before it goes into the pan.
