Benxi Tofu Skin 本溪豆皮

Benxi Tofu Skin (本溪豆皮) is a soybean sheet eaten in the city of Benxi (本溪), Liaoning. The Benxi Culture, Tourism, Radio and Television Bureau describes it as a food made by letting soy milk set and then drying it, and it is also a grilling favourite: a CCTV food programme calls tofu skin the "star" of Benxi barbecue.

Flavour and texture

The city bureau describes the sheets as soft and springy with a fine texture and a savoury taste. Liaoshen Evening News (辽沈晚报) singles out their pliable texture and strong soybean aroma, and presents this plain-looking soy product as the fruit of hand skills handed down through generations.

How it is eaten

The bureau notes that the tofu skin can be eaten as it is, stir-fried with other ingredients, cooked in soup, fried with noodles or dressed as a cold dish. Its grilled form, Benxi grilled tofu skin (本溪烤豆皮), was one of 14 Benxi dishes chosen in the 2024 "Beautiful Markets, Beautiful Food" (美市美食) selection of Liaoning landmark dishes run by the provincial Department of Commerce, alongside Benxi mutton soup (本溪羊汤).

Where it comes from

In March 2026 the Benxi city government published its eighth batch of municipal intangible cultural heritage, which includes the making technique of Benxi grilled tofu skin under the Laogao Taitai (老高太太) name, with the Nanfen District (南芬区) cultural service centre as the protecting body. The Ministry of Culture and Tourism lists a stop in Benxi for grilled tofu skin on its Liaoning heritage-food route. In November 2025 Liaoshen Evening News reported that Benxi tofu skin and Benxi mutton soup had been formally added to the city's own "Benbang cuisine" (本帮菜).
