Ingredients
The reservoir holds 43 species of river fish in 35 genera, among them bighead carp, black carp, grass carp and silver carp. Wild bighead carp (花鲢) is the best known: the fish are not given any feed, grow large and have fine, tender flesh. The reservoir's bighead carp and common carp both carry the national geographical-indication product title.
Where it comes from
Dahuofang Reservoir supplies drinking water to seven cities in Liaoning. People's Daily Online reported in 2018 that restaurants, tourist hotels and farm resorts in Fushun were developing the reservoir fish banquet and that it was becoming a Fushun food brand. The Fushun city government names it alongside mala ban (麻辣拌), a spicy mixed dish, as a local food it builds into tourism, with tasting areas in themed streets and scenic spots.

Liaoning Daily's autumn route for Fushun sends visitors from the Sarhu (萨尔浒) scenic area to Baijiadian (白家店) in the village billed as the 'first village of river fish' (河鱼第一村) to eat the reservoir fish banquet.
