Jinzhou Pot-Steamed Flatbread (锦州烀饼) is represented by doujiao hubing (豆角烀饼), a dish in which flatbread cooks over beans, potatoes and meat. Its name points to hu (烀), a method using a small amount of water to combine steaming and boiling.

Bread over the stew

CCTV describes a beef version: beans, potatoes and beef go into the pot first and are stir-fried with seasonings. Water is poured in around the edge, the prepared flatbread is laid across the ingredients, and the pot is covered. The vegetables and meat cook beneath the bread.

Two textures in one bread

As the stew finishes, so does the flatbread. Its upper surface stays fragrant and springy, while the underside takes up the cooking juices and becomes soft and savoury.
