Mutton and Offal Soup (羊汤) is part of the food repertoire of Lingyuan (凌源), in Chaoyang (朝阳). A local publicity-department introduction published by Xinhua describes a version combining head meat and offal with an established bone stock.
Flavour and texture
The broth is milky white and strongly flavoured, with a balanced meaty taste and no pronounced rank smell. Chilli and aged vinegar from Kazuo (喀左) are added to the bowl, bringing heat and sourness to the rich stock.
Where it comes from
Lingyuan also has family businesses developing their own versions. In Economic Daily’s August 2022 coverage of Chaoyang foods, Dafuzi (大福字) owner Cong Zhipeng (丛志鹏) traced the business through four generations. Cong distinguished its bone-broth-focused soup from traditional preparations centred on boiling meat and offal.
