Boiled Bacalhau Salt Cod (白烚马介休) is a Macanese dish found in Macau (澳門). At Kun Kei (坤記餐室), a restaurant featured in a food guide bearing Macao Government Tourism Office branding, the fish is cooked with cabbage, sour onions, olives, beans and olive oil.

Flavour and texture

The Macao Government Tourism Office-branded publication describes Kun Kei’s boiled preparation as salty, aromatic and savoury, and as a homestyle dish of Macau’s Macanese community. It is one of the restaurant’s signature dishes.

Where it comes from

Third-generation operator Lam Lun (林倫) traces the restaurant to grandfather Lam Kwan (林坤), who worked as a kitchen helper aboard a Portuguese warship and later learned cooking at the naval establishment. Lam Kwan subsequently opened the restaurant on Rua do Campo (水坑尾街), passing its Macanese cooking tradition through the family.
