Agar Jelly Cake (大菜糕) is a seaweed-based jelly dessert eaten in Macau (澳门), where versions may include egg ribbons, milk, coconut milk or fruit. It is eaten as a summer snack and has a cool, slippery texture.

How it is made

The jelly sets after the seaweed-derived gelling material is boiled and allowed to cool. It sets into a block. The basic preparation is simple, while additions such as milk or fruit give the Hong Kong (香港) and Macau versions their variations.

How it is eaten

The same dessert takes several forms elsewhere. In Taiwan (台湾), it is often paired with lemon juice, sweet syrup or winter-melon tea. In Zhoushan (舟山), it can be made into a jelly-like drink or served with brown-sugar syrup. These are regional presentations of the same seaweed-set sweet, which is also eaten in Malaysia, Guangdong (广东) and Fujian (福建).
