Baked Duck Rice (焗鸭饭) is rice topped with duck, Portuguese sausage and bacon and finished in the oven. The Macao Government Tourism Office (澳门特别行政区政府旅游局) lists it among the main courses of the Macanese and Portuguese cooking served in Macau, and notes that some visitors rank it among the best Macanese dishes.

How it is made

The tourism office describes the dish simply: duck meat, Portuguese sausage and bacon are laid over rice, and the whole dish is baked in the oven.

The Macau government's Distinctive Shops programme (特色店计划) gives a fuller account of the version at Fok Lung Portuguese Restaurant (福龍葡國餐) on Rua da Felicidade (福隆新街), in business since 1989. There the richly flavoured duck is pulled into shreds, which are folded into rice cooked in duck stock; the rice is then baked in the oven.

Flavour and texture

The tourism office calls the flavour light and not greasy. The Distinctive Shops profile credits the baking with layers of texture and says the dish tastes even better with Portuguese sausage. The same profile lists Portuguese baked duck rice among Fok Lung's recommended dishes, next to its curry crab, bacalhau baked with cream and Portuguese roast suckling pig.
