Golog Yak Meat (果洛牦牛肉) is made into thin dried slices by Gangqiong Quenuo (岗琼却诺) in Maqin County (玛沁县), Golog (果洛). Its Nuoyang (诺仰) product uses selected local yak hind-leg meat and lists just meat and salt as ingredients.

How it is made

During Qinghai Daily’s June 17, 2025 visit, workers fed thick pieces of hind-leg meat through a slicing machine. General manager Degejia (德格加) described this cut as relatively low in fat, with a high meat yield. The company makes thin slices rather than the strips or chunks common in other dried-meat products.

The slices spend eight hours in enclosed drying equipment. A separate workshop handles packaging, sterilization, weighing and coding.

Flavour and texture

Degejia associates the thin-slice method with a crisper bite. The simple meat-and-salt formulation is central to this particular product. After graduating in 2019, he returned home and founded the business with his elder brother Cairang Huajiao (才让华角), making dried yak meat its main product.
