Zekog Yogurt (泽库酸奶) is the set yogurt of Zeku County in Huangnan Prefecture — milk fermented in the bowl in a pastoral county on the Qinghai plateau.

Milk set in the bowl

The method behind Qinghai yogurt is short and physical. Local milk is pasteurised with high-temperature treatment, cooled, and then fermented by hand the traditional way rather than stirred in a tank and pumped into cartons.

Because it sets where it is fermented, the container is the mould. The top firms into a skin, the body holds a spoon upright, and whey often shows at the edge — the visible sign of a live set rather than a stabilised product made to travel.

Tart, dense, clean

Plateau yogurt is sourer and denser than sweetened supermarket yogurt, because the milk carries more fat and less water than lowland milk. The flavour is lactic and clean, and it finishes short instead of coating the mouth.

Sugar is added at the table, usually as a spoonful left sitting on the surface, and you stir it through or take a little with each spoon. Jam, raisins and honey appear at stalls, but the plain bowl is what the milk actually tastes like.

Zeku and the wider bowl

Zeku County sits in Huangnan Tibetan Autonomous Prefecture, in the pastoral south-east of the province, and the association with yogurt is a herding association: the county keeps livestock, and milk is what the season gives you in quantity.

The version with the clearest public paper trail is Datong, near Xining, where hand-made set yogurt is registered as intangible heritage and its makers sell over a thousand bowls a day at busy events. Zeku is the same family of food, made where the herds are.

Milk, culture, sugar

Milk and a live culture are the whole product in the plain version. Sugar, honey, raisins or fruit go on at the point of sale, and that is where most of the variation between stalls comes from.

Qinghai cooking leans sour, spicy and salty and cooks mostly by boiling, braising and roasting, with mutton and beef as the main ingredients. Yogurt is the cool, acid note in the middle of that, and it is why a bowl of it belongs on a plateau table rather than a dessert trolley.

Ordering a bowl

At a stall the yogurt is sold by the bowl, already set, with the sweetening added in front of you. Say how much sugar you want, or ask for it plain if you want to judge the milk and the fermentation on their own.

Look at the surface before you buy. A skin and a little separated whey point to a bowl set that day rather than a transported industrial product, and it is also the bowl worth stirring before the first spoon.

When it is eaten

It is eaten in the afternoon as a snack, at the end of a heavy meat meal, and increasingly as the thing visitors buy in sealed portions to take away. After mutton and butter tea, it clears the palate in a way tea does not.

Because it needs no cooking and no ordering language, it is one of the easiest plateau foods to try. Buy a small bowl first: one spoonful tells you far more than any description of how thick it is.

Publicly documented in most detail at Datong, the technique is the same across the province: local milk, high-temperature pasteurisation, hand fermentation in the vessel it is sold in.
