Baodian Donkey Meat (保店驴肉) takes its name from Baodian (保店) in Ningjin County (宁津县), Dezhou (德州). It uses Dezhou black donkey meat and is also known locally as five-spice donkey meat.

Long cooking and a stock soak

Qilu News describes a cooking broth containing more than twenty herbal ingredients. The meat is brought to a boil over strong heat, then cooked gently for eight to twelve hours. It subsequently soaks in old stock for a day before eating.

Tender meat served cold

The finished meat is tender and lean without being dry, and remains together rather than falling apart. Dazhong News describes cold eating as the preferred service and identifies it as banquet food. The preparation craft received Dezhou municipal intangible cultural heritage recognition in 2006.
