Boshan Vegetable-Filled Pancakes 博山菜煎饼
Boshan Vegetable-Filled Pancakes is featured among the local specialties of Shandong.

Boshan Vegetable-Filled Pancakes (博山菜煎饼) combine grain pancakes with a cooked filling of tofu, glass noodles, dried shrimp and chives or spring onion. The filled pancakes are folded and griddled until golden, leaving a soft interior and crisp exterior.
How it is made
In the description published by Zibo’s Commerce Bureau, the filling is cooked in peanut oil or lard. A pancake is opened into a fan shape, spread evenly with filling and folded into a triangle. Both sides are cooked with a little oil, then it is folded again into a long strip and griddled on both sides until golden.
Ingredients
Boshan (博山) pancakes include a pure-millet type and mixed-grain types using millet with sorghum, or maize with sorghum. The batter also varies: fermented batter makes sour pancakes, unfermented batter makes the type called sweet pancakes, and a third kind lies between the two.
Where it comes from
Vegetable-filled pancakes developed from the pancakes eaten as staple food around Boshan and Zichuan (淄川), south of Zibo (淄博). They combine the grain wrapper and vegetable filling in one food.
Zibo’s commerce bureau records an adapted version made by Zibo Hotel cooks under the name Pugong Vegetable Pancakes (蒲公菜煎饼).
