Boshan Mixed Stew (博山烩菜) combines salted meat with spinach, starch noodles and dried tofu. It is a food of Boshan (博山) in Zibo (淄博), described in the city culture and tourism bureau's guide to Shandong dishes.

How it is made

The meat is mainly lean and is coated in a flour batter. After a brief frying, it goes into a soup pot to cook. Spinach, starch noodles and dried tofu are the accompanying ingredients.

Flavour and texture

The soup has a flavour between rich and fresh, with an underlying taste of the salted meat.

How it is eaten

One way to eat it is to ladle both ingredients and soup into a small bowl. Another is to take the meat from the large serving bowl first, then accompany it with the soup.
