Boshan Hard-Fried Pork (博山硬炸肉) uses lean pork with a thin coating. Writing in Luzhong Morning News, Wang Jiwu (王济武) distinguishes its thin coating from the thicker batter used for ordinary fried pork.

Seasoning and coating

Wang lists lean pork, soy sauce, salt, nanjiu cooking wine (南酒), starch mixed with water and ground Sichuan pepper. The meat is marinated and given a thin layer of coating before it enters the oil.

Two rounds in the oil

The second frying uses hotter oil than the first. After the pork is lifted out, ground Sichuan pepper is sprinkled over it. This final seasoning accompanies the contrast between the browned outside and the tender centre.
