Vegetable-Filled Pancakes (菜煎饼) in Zaozhuang (枣庄) enclose a generous vegetable filling in thin flour pancakes. The Shizhong District (市中区) government describes round wrappers roughly 30–35 centimetres across, with vegetables and additional ingredients chosen to suit the eater.
A filling chosen to taste
The district description lists tofu, tiny dried shrimp, vermicelli, egg and peanut oil alongside seasonal vegetables. In Dazhong News’s preparation, the vegetables are mixed with cooking oil, salt, MSG, cumin and ground chilli.
Browning and folding
The egg is cooked separately on a hot aozi (鏊子) griddle and removed. One pancake goes onto the griddle, followed by the seasoned vegetables and egg, then a second pancake covers the filling. Both sides cook until yellow and crisp. The sides fold inward to form a rectangle that can be held in the hand or cut in half. These filled pancakes can be eaten for breakfast or as a main meal.
