Paper-Thin Grain Pancakes 煎饼
Paper-Thin Grain Pancakes is featured among the local specialties of Shandong.

Paper-Thin Grain Pancakes (煎饼) are a household staple of Linyi (临沂) and the Yimeng hills (沂蒙). Wheat, sorghum, maize, millet or dried sweet potato can form its batter, giving the pancakes different flavours and degrees of chew.
How it is made
The grain is washed, soaked and stone-ground. Some makers add cooked grain before milling, in proportions of one-third or one-half, to make a softer pancake. Fermenting the batter produces a sour version.
Three tools shape the work: a slightly domed iron griddle, a handled wooden paddle for spreading batter, and an oiled cloth pad to prevent sticking. Paddle-spread pancakes are somewhat thicker and show scraping marks; those spread with a bamboo blade are thinner. A thick sweet-potato batter can instead be rolled as a ball across the hot surface.
How it is eaten
The sheets are folded or rolled around cooked dishes, meat, eggs, vegetables or pickles. Spring onion and sweet sauce are a traditional combination. Another filling, zha doufu (渣豆腐), consists of finely chopped vegetable leaves cooked with bean flour, salt and water.
For pancake pockets, cooks place chives with egg or tofu between two pancakes and cook the filled pair on the griddle.
Flavour and texture
Mengyin’s culture and tourism bureau describes pancakes made with the bran retained. It also describes their firm, chewy character. Grain choice, batter fermentation and spreading tool all create variations within the local tradition.
