Stir-Fried Sea Worms with Chinese Chives (韭菜海肠) is a traditional Yantai (烟台) dish combining green chives with sea worms valued for their fresh sweetness and crisp, slightly elastic texture. Former cook Xue Honghua (薛洪华) describes its preparation in a Yantai newspaper account.
Cleaning and a brief blanch
The mouth and rear end are cut away, and the internal contents are squeezed out. Xue cuts the cleaned body walls and chives into short lengths. He briefly blanches the sea-worm pieces, lifts them out before the water returns to a full boil and drains them.
Chives first, sea worms last
In a separate pan, the chives are fried in oil until partly cooked and seasoned with salt. The sea worms are then added over strong heat for a rapid stir-fry. Xue emphasizes an uninterrupted finish: the resulting dish brings together red and green colours while preserving the sea worms’ sweet, crisp-tender character.
