Juxian Braised Chicken 莒县烧鸡
Juxian Braised Chicken is featured among the local specialties of Shandong.

Juxian Braised Chicken (莒县烧鸡) includes the Zhu family’s Fengming chicken (朱家凤鸣烧鸡), a whole bird shaped, coloured and fried before braising with seasonings and established stock. This Juxian (莒县) version has a pale golden surface, crisp skin and tender meat.
How it is made
A 2021 Dazhong Net feature describes the family’s preferred bird as a healthy free-range chicken around one year old and about three jin in weight. Older birds give coarse meat, while very young birds lack the desired texture.
After cleaning and shaping, the chicken is coloured and fried, then simmered with a seasoning mixture and some old stock. The family process has more than ten operations and dozens of aromatic ingredients.
Where it comes from
Dazhong Net traces the Zhu family’s practice to the Qing Jiaqing reign, more than two centuries before its feature. Maker Zhu Liwen (朱立文) identified himself as the seventh generation.
