Confucius Mansion Yipin Layered Pot (孔府一品锅) is a historic Confucius Mansion banquet dish assembled in a specially made tin pot. More than a dozen mountain and sea delicacies are arranged into a balanced pattern, seasoned with santao stock (三套汤) and cooked over strong heat.

How it is made

Jining’s (济宁) culture and tourism bureau calls the preparation Assorted Yipin Pot (什锦一品锅). The arrangement inside the vessel is part of its presentation: ingredients form a decorative pattern before steaming and cooking. The same household’s stock is valued for its fresh aroma and mellow flavour.

Where it comes from

The bureau links yipin, meaning first rank, to the rank and robes granted to the Duke Yansheng (衍圣公) in the early Ming dynasty. The household used the term for several dishes, including birthday peaches, tofu and meatballs.

Yipin pot also appears in the historic household banquet system, where menus varied according to guests’ status and relationship to the family. Jining city government includes it among the notable dishes of this Qufu (曲阜)-centred cuisine.
