Linqing Lamb Shaomai Dumplings 临清烧麦
Linqing Lamb Shaomai Dumplings is featured among the local specialties of Shandong.

Linqing Lamb Shaomai Dumplings (临清烧麦) have thin wrappers through which the filling is visible and tops shaped like opening flowers. Dazhong Net describes them as one of Linqing’s (临清) four noted flour foods, with more than two hundred years of local history.
How it is made
At Hangtong Shizhuang (航通食庄), visited by Dazhong Net in 2019, the ingredients include strong refined flour, tender lamb and the white parts of spring onions, with sesame oil and skimmed fat for seasoning.
During rolling, a special tool creates a pale, frosted effect around the flower-like upper edge. The finished dumplings resemble little lanterns, giving them the alternative name lantern buns (灯笼包). More than ten are arranged in a steamer like lotus petals, each with a pomegranate-mouth shape.
How it is eaten
The hot dumplings are rolled through vinegar before eating. Dazhong Net describes the filling as loose and fragrant, carrying the aroma of lamb without a strong mutton smell.
