Muping Barbecue Skewers (牟平烧烤) are the grilled skewers of Muping (牟平), a district of Yantai (烟台) in Shandong. The Muping district government says the style is well known across Yantai and that on weekends many people travel from other parts of the city to Muping just to eat it.
What goes on the grill
Alongside the usual meat, vegetables, fish and seafood, Muping grills take a lot of offal: pig kidney, pig heart, chicken gizzard and xinguan (心管). In recent years menus have taken in pig palate, yaojin (腰筋) and huachang (花肠) as well. CCTV's food series on city signature dishes singles out grilled tuisuizi (腿穗子) as the Muping speciality.
