Qufu Thin Griddle Pancakes (曲阜煎饼) are a local speciality of Qufu (曲阜), with a thin skin, generous filling and a fragrant, crisp texture. Peanut, sesame and mala, or numbing-spicy, versions provide different flavour choices.

Seasoned fillings

Dazhong Net (大众网) describes a filling mixed from peanut oil, crushed fried peanuts, chopped scallion, salt and ground chilli. The filled pancakes are then cooked on a griddle.

Dried on an iron griddle

The Shandong CPPCC Literature and History Museum (山东省政协文史馆), in its profile of local producer Wanchenggong (万成公), describes the salty, crisp variety. Large Shandong pancakes are spread with oil, salt, scallion, sesame, peanuts, ground Sichuan pepper and shisanxiang (十三香) spice blend, then dried by heating on an iron griddle. Wanchenggong sells these pancakes alongside its pastries and mooncakes, through both the local market and online channels.
