Grain-Thickened Breakfast Soup (糁汤), or sa tang, is an everyday breakfast in Jining (济宁). A milky-white bone broth and egg form the local version described by the Taibai Lake New Area Administration (太白湖新区管理委员会).
Broth, wheat and egg
Yun De (云德), writing in Workers’ Daily (工人日报), describes Jining sa soup made by simmering beef and sheep bones with wheat grain to form the broth. Hot soup is then used to cook beaten egg. The Taibai Lake administration specifies a broth simmered for more than four hours, with minced ginger, coriander and sesame oil added as seasonings.

Yun places sa soup among Jining’s best-known breakfast soups. His account describes soup shops spilling onto small tables outside their doors when the breakfast crowds fill the indoor seating.
