Shikou Braised and Smoked Chicken (史口烧鸡) is a Shikou (史口) speciality with firm, chewy meat and a savoury, salty flavour. Haibao News describes it as combining traditional Shandong (山东) cooking techniques with local seasoning.
How it is made
Selected meat chickens are slaughtered, plucked and cleaned, then treated to remove unwanted odours. Shaping and seasoning precede cooking and smoking. Haibao names a six-flavour seasoning stage. The finished bird is described as neatly presented, with meat that retains its bite.
Where it comes from
In its 2022 feature on Dongying’s (东营) heritage workshops, Haibao places the tradition at more than three centuries old. It recounts older residents’ memories of Shikou as a transport landing and transfer point for travellers. The resulting commerce supported a variety of snacks, with the chicken singled out as a local speciality.
