Wanrong Starch Jelly Noodles (万荣凉粉饸饹) is a summer dish from Wanrong County (万荣县) in Yuncheng (运城), Shanxi, that serves starch jelly and hele (饸饹) noodles together in one bowl under a sour and spicy dressing. Shanxi News Net, the website of Shanxi Daily, calls it a Wanrong speciality.

Flavour and texture

The starch jelly is clear and translucent, smooth and springy, while the hele noodles are soft and chewy. With the sour-spicy sauce poured over, the bowl is eaten cool; Shanxi News Net describes the freshness of the jelly mixing with the wheat aroma of the noodles.

How it is eaten

In Yuncheng it is a hot-weather food, which Shanxi News Net calls the most popular quick cooling meal of the streets and lanes. The paper introduces the dish with the line 'rather skip a feast of mountain and sea delicacies than miss starch jelly and hele' (宁舍一顿山珍海味,不能错过凉粉饸饹).

Where it comes from

The Yuncheng Culture and Tourism Bureau announced the city's ten best tourism routes in September 2022. Starch jelly with hele is among the recommended foods on the route devoted to early Chinese civilisation, which takes in Houtu Temple (后土祠) in Wanrong, and Wanrong starch jelly with hele appears again on the spring flower-viewing route.
