Youyu Lamb (右玉羊肉) is a regional meat product from Youyu (右玉) county in Shuozhou (朔州), northwestern Shanxi (山西). Its name received agricultural geographical-indication registration from the Ministry of Agriculture in 2010.

Flavour and texture

The Shanxi provincial government describes the meat as tender and aromatic, with alternating fat and lean and richness without greasiness. When it is boiled, the broth is described as clear and transparent, while the fat has a light fragrance.

Where it comes from

The provincial government’s 2017 account gives the registered production area as ten townships and 321 administrative villages within Youyu, including Xincheng (新城), Youwei (右卫) and Weiyuan (威远). The provincial account places the area at about 1,400 metres in elevation and describes broad grazing slopes, plentiful water and abundant forage. Forest and grass resources form part of the county’s setting for sheep husbandry.
