Alishan Aiyu Jelly (阿里山爱玉) is made by washing the seeds of female aiyu fruit in water. Wild aiyu is harvested from tall trees in the Alishan (阿里山) mountains, with one harvest each year.

From fruit to jelly

Only seeds from female fruit yield the jelly. A food workshop at National Penghu University of Science and Technology (國立澎湖科技大學), led by Tsou (鄒族) teachers, pairs hand-washed Alishan aiyu with bamboo-tube rice made from millet and glutinous rice.

A mountain gathering tradition

At Fenqihu (奮起湖), the family behind Aiyu Bo's House (愛玉伯ㄟ厝) began sharing freshly made wild aiyu with visitors around 2001. Its founder collected wild fruit under forestry harvesting rights; his children later turned the family's gathering terrace into the setting for serving aiyu.
