Alishan Bamboo Tube Rice 阿里山竹筒饭
Alishan Bamboo Tube Rice is featured among the local specialties of Taiwan.

Alishan Bamboo Tube Rice (阿里山竹筒饭) is a Tsou (鄒族) rice preparation associated with Alishan (阿里山). Soaked glutinous rice cooks inside a segment of young guizhu bamboo (桂竹), which is roasted over a fire.
The grain-filled tube
A Tsou-led workshop at National Penghu University of Science and Technology (國立澎湖科技大學) identifies the plain combination of millet and glutinous rice as a traditional filling. Its account connects the bamboo container with earlier hunting trips, when people carried rice and used the forest's bamboo in place of cooking utensils.
With other Alishan foods
The workshop pairs bamboo-tube rice with hand-washed wild aiyu jelly. In Shanmei (山美), the Alishan scenic-area administration describes the fragrant rice alongside roasted wild-boar meat at Shan Zhi Mei Restaurant (山之美餐廳). It also lists millet wine and green-bamboo wine among the meal's drink pairings.
